Because this is a somewhat sweet pickle recipe, a hot Italian sausage was a good choice. Made for a great relish.
You can tell that the photo at the recipe link above was taken immediately after the ingredients were put together, not when it was actually ready to eat. The red onions go a soft pink with no red edge at all after three curing days.
